Pollo Guisado

Ingredientes

• 1 whole chicken , cut into 10 pieces (See note)
• 5 teaspoons Diamond Crystal kosher salt ; for table salt, use half as much by volume
• 1 can tomato paste
• 5 medium cloves garlic
• 5 dried árbol chiles , stems removed
• 3 whole cloves
• 1 tablespoon chicken bouillon powder
• 2 teaspoons whole black peppercorns
• 2 teaspoons sweet paprika
• 2 teaspoons ground coriander
• 1 teaspoon ground cumin
• 1 teaspoon dried marjoram or Mexican oregano
• 1 teaspoon dried thyme
• 1 quart homemade chicken stock or store-bought low-sodium chicken broth
• 2 tablespoons olive oil
• 1 small white onion , cut into 1/4 inch dice
• 3 plum or Roma tomatoes , cut into 1/4 inch dice
• 1 teaspoon Diamond Crystal kosher salt , plus more to taste; for table salt, use half as much by volume
• 2 russet potatoes , peeled and cut into 1-inch pieces
• 4 carrots , peeled and cut into 2-inch pieces
