Grilled Potato Wedges

Ingrédients

• 1 teaspoon ground cumin
• 1 teaspoon ancho chile (see notes)
• 1 teaspoon Diamond Crystal kosher salt ; for table salt, use half as much by volume
• 1 teaspoon freshly ground black pepper
• 3 large russet potatoes , scrubbed and cut into 1-inch thick wedges
• 1/3 cup extra-virgin olive oil
